EXO White Chocolate Mousse

White Chocolate Mold

 

Step 1. Take the acetate srtips and cut it and wrap into a cyclinder and tape it. You can wrap it around a bottle to make it easier if you prefer. make sure it is avout the same size as the circles on the template.

 

Step 2, Next add some tempered white chocolate to the middle of the plastic cylinder and spread all around as smoothly as you can. Then let it set.

 

Step 3. Once it is set check to see if there are any weakspots if so then add more chocolate

 

Step 4.  To make the base of the cylinders, spread chocolate onto a sheet of baking paper. tap it on the bench to smooth it out so it is a flat surface, then once its firm but not set use a circle cutter the size of the base of your cylinder and cut out circles.

 

Step 5. Once the chocolate cylinders are set cut the plastic with a knife and unwrap the plastic whilst being careful not to break the cylinder.

 

Step 6. heat a saucepan on the stove top and press the base of the cylinder onto the hot pan to melt the edges then add it to the circle base we cut out earlier. Make sure you dont have any holes at the join if you do, you can add some more white chocolate to the inside.

Mousse:

90 millilitres cream

210g White Chocolate

1/4 cup of water

75g or 1/3 cup castor sugar

4 egg yolks

1/2 teaspoon vanila extract

additional 310 millilitres cream

Tip:

When choosing white

chocolate make sure it has

a high percentage of cocoa

butter 30% or more is good.

Mousse:

 

Step 1. Add the 90 ml of cream by pouring it over the white chocolate in a bowl then heat it in the microwave, and then stir to form a ganache, then leave to cool

 

Step 2. Beat the 4 egg yolks in a bowl until they are pale and fluffy.

 

Step 3. Heat the sugar and waterin a saucepan, stiring over high heat until the sugar is dissolved. Keep boiling it until it reaches to 114.44 degrees celsius (238F)

 

Step 4. With the beaters running pour the hot sugar syrup into the egg yolks, and continue to beat until it cools down.

 

Step 5. Then with the beaters still running on low add the now cool down ganache and vanila extract. Then once its mix leave to cool down.

 

Step 6. In a another bowl whip the reamaing 310 ml of cream into soft peaks.

 

Step 7. Then fold the whipped cream into the chocolate mixture a little at a time, until the mixture is smooth

 

Step 8. Fill up yhe chocolate cylinders you made earlier with the mouse, then place in the fridge to let the mouse set overnight.

Chocolate EXO Symbols

 

Step 1. Print template onto A4 piece of paper. Template is available in the equipment list as a downloadable PDF file

 

Step 2. Place template underneath Acetate Sheet

 

Step 3. Using melted dark or milk chocolate or chocolate writing icing go over the design on the acetate sheet.

 

Step 4. Then leave to set in the fridge

 

Step 5. after the chocolate design has set melt some white chocolate and using a small spoon spread over the top of the dark chocolate design making sure to stay in side the circle template.

 

Step 6. then leave to set in the fridge

 

Step 7. once set you can place the chocolate symbol circles on top of the white chocolate mousse. You can either seal it with white chocolate or just simply place it on top making it easy to take off

 

Step 8. Serve

Recipe Notes:
  • You can choose to make either EXO-K or EXO-M symbols or choose 6 of your favourite members.

  • To melt the choclate melt in a safe bowl over a saucepan of boiling water, I found this to be better than microwaving as the chocolate melted more evenely and microwaving made the chocolate lumpy and set to quickly

  • A torch can help you see holes and weaknessesin the sides of the chocolate cyclinder
